A Bloggers Table at Sublym

Earlier in the month of February, I was invited to a bloggers table at Sublym, a brand new Kitchen and Bar in Sector 29 Gurgaon that serves both Indian and Chinese cuisines.

A visit to Sublym was long overdue; I had already heard so much about the property from friends and relatives, and wanted to see what the buzz was all about!

The first person I stumbled upon at Sublym was restaurateur Sanjana Gera. Sanjana is the Director at Sublym and a well-known name in the institutional catering business (her entrepreneurial venture Shreya Hospitality provides food and services to multinationals in and around Gurgaon).

Sanjana Gera

Sanjana's transition from being an established player in the institutional catering business to a relative newbie in the restaurant business took place in the year 2010, when she opened up Shreya's, a 52-seater fine-dining restaurant in the Central Plaza Mall, Gurgaon.

In 2015, Sanjana launched the Sublym Kitchen and Bar in Sector 29 Gurgaon, which is one of the prime locations to establish any new F&B venture these days.

Sublym Kitchen and Bar

My first impression of Sublym was that it seemed like a modern fine-dining restaurant with world-class interiors. What I didn't realize was that Sublym also boasts of the longest bar in Gurgaon that serves premium drinks from across the globe.

Situated right in the heart of the millennium city Gurgaon, Sublym with its contemporary and chic interiors is spread over two levels. The fine-dining restaurant is located at the level 1 of the premises; you can also move to the Open Terrace and Party Lounge located at the level 2.

Sanjana's vision to create a surreal ambience at Sublym seems to have worked out pretty well; for the entire duration of my stay there, I felt a quaint sense of relaxation, something I usually don't experience at most fine-dining properties that I frequent.

Sanjana always wanted to create a space where the ambience is as sublime as the food being served. The subtle shades of gray lend a rare, classy look and feel to the interiors.

Decor at Sublym

The rooftop was conceived as an enclosure of green; thus, a steel envelop is designed such that it can house several saplings. Hats off to Sanjana for creating a full green enclosure inside a boutique dining property!

Sublym's kitchen is in the capable hands of Chef Jaswant Singh Negi. The menu designed by Negi offers a veritable treat of Indian and oriental cuisines, with a unique mix of old favorites and new fusion food.

From Dimsums to Murgh Malai Tikka, Sublym offers an overwhelming selection of high quality food. Plus the playful presentation highlights the finesse with which each dish is prepared.

The food at Sublym brings along a mélange of flavors from India, Thailand, and China, creating a truly delightful experience.

A signature mocktail at Sublym that contains a unique mix of guava juice, lime, and Tabasco.

Red Wine

Danzante Chianti
[My rating: 5 out of 5]

Deep ruby in color, this popular red wine is produced in the Chianti area of Tuscany (Italy). I loved its intense aroma with elegant floral notes, leaving an aftertaste of wild berries.

Kasundi Fish Tikkas are popular Bengali fish kebabs with mustard, known for tanginess.

Apart from the above, you could also go for the Cold Vietnamese Rolls, perfect appetizers on a hot summery day. I also liked the Thai Puchka, which is a clever take on the traditional Kolkata dish; it contains a fusion of Thai flavors.

Mains

Raan Sikandari
[My rating: 5 out of 5]

A historical dish named after Alexander the Great [who was also known as Sikandar (the conqueror)], Raan Sikandari comprises slow roasted legs of lamb served with masala gravy.

Pok Choi, Corn, and Vegetable Dumpling

These vegetarian dumplings can easily balance out a heavy meal, besides being fragrant, savory, and delicious.

Don't leave Sublym before indulging in a little sin. You'll absolutely fall in love with the brownie and carrot cake with cinnamon streusel topping, both of which are served with ice creams.

Finally, as I was about to leave, I met Sarvdeep Singh, who is the Vice President at Shreyas Hospitality and Vice President - Operations at Sublym. Sarvdeep gave me a walking tour of the 60-cover restaurant and also made me meet his ground staff.
